An admin cares because this determines whether editing the referenced vNIC also changes this iSCSI interface's behavior, or whether the two are configured independently. For example, an admin trying to understand why changing a data vNIC's VLAN did not affect the iSCSI path would check this vnicDefType value to see whether the iSCSI interface was actually defined independently.
