Watching this update counter lets an admin verify that monitoring is actively refreshing for that specific disk's motherboard sensor, rather than silently stuck on old data. If this counter stops incrementing while the timeCollected timestamp also stalls, an admin would know the polling for that particular HDD's temperature sensor has stopped rather than assuming the drive is simply staying at a constant temperature.
