What is cucsEquipmentServiceDefName?

This is the human- or system-assigned name string for this equipment service-policy definition. Since this object defines how and when a piece of equipment (a blade, PSU, fan module, IO module, etc.) may be serviced or physically removed, the name is what an admin sees in the UCS Manager GUI or CLI to recognize which specific instance they are looking at without decoding the DN by hand. Because a UCS domain typically defines only a handful of these service-policy entries, a distinctive name (versus the default) is what lets an admin tell a custom maintenance policy apart from Cisco's built-in defaults at a glance. Most entries default to a terse system-generated token, but an admin working through the CLI can rename an editable instance to something locally meaningful.
