It matters because the set of protocols listed here is exactly what an admin can build visibility or QoS policy around; if a protocol an admin cares about is not in this list, NBAR simply cannot classify that traffic on this device's current software version. Seeing 'skype' appear in this table would tell the admin that traffic classification and reporting for Skype is available to configure.
